Sweet-Confections

This class teaches the fundamental skills needed to make a variety of confections and treats, including truffles, marshmallows, pate de fruit, flavored caramel popcorn, toffee, fudge, and trendy brigadieros, a South American favorite. From flavored ganache to delightful fruit candies, you will learn essential techniques to create these lavish treats.  The class will cover proper handling of pastry equipment and standard recipes easy to implement into your business.

 

Length of Class: 2 days
Class Cost:  $105 per person

 

Day 1 Schedule

  • Introduction (9:00 a.m. – 9:15 a.m.)
  • Theory (9:15 a.m. – 10:30 a.m.)
    • Fundamentals of pastry and confections
    • How to develop a specific product offering for your customers
    • PreGel AMERICA’s pastry product offerings
  • Break (10:30 a.m. – 10:40 a.m.)
  • Hands-on Production (10:40 a.m. – 12:00 p.m.)
  • Lunch (12:00 p.m.–1:00 p.m.)
  • Hands-on Production (1:00 p.m. – 3:15 p.m.)
  • Clean-up (3:15 p.m.–3:30 p.m.)
  • Review and clean up (3:30 p.m.–4:00 p.m.)

 

   Day 2 Schedule

  • Hands-on Production (9:00 a.m. – 10:30 a.m.)
  • Break (10:30 a.m. – 10:40 a.m.)
  • Hands-on Production (10:40 a.m. – 12:00 p.m.)
