Ice cream, one of America’s classic and most popular desserts, joins the PreGel International Training Center’s class line up with a fun three-day hands-on immersive course. Experience the processes to make artisanal ice cream recipes, exploring a variety of unique flavor combinations along with decorating techniques and the scientific principles that will help you better understand the functionality of ingredients to help you produce a better ice cream.
Attendees will be educated on how to use cold and hot process machines, as well as the proper use of batch freezers and display cases. This class also covers in-depth recipe formulation, serving, cleaning and sanitizing procedures for daily operations as well as trouble shooting techniques.
This class is approved by the American Culinary Federation for 18 Continuing Education Hours.
