2019 marks the 10-year anniversary of our 5-Star Pastry Series®, which is dedicated to sharpening the skills of advanced pastry chefs. Every year we have been fortunate to invite our students to study with the most esteemed chefs in the industry. This year, we happy to introduce Chef William Werner, chef/partner of Craftsman and Wolves (CAW), an award-winning, San Francisco-based contemporary pâtisserie and café.
Formerly a lifeguard, Chef Werner almost instantly yielded to the natural calling of culinary arts, particularly desserts, after being introduced to the craft by a colleague. Now, the 2013 award-winner of both the prestigious James Beard Foundation’s “Outstanding Pastry Chef” and StarChefs Rising Stars, will invigorate class attendees with his passion for pastry and vast knowledge of contemporary patisserie. Attendees can look forward to exploring:
- Classic and modern techniques to create a variety of patisserie items including entremets, tarts, baked goods and confections for a wide range of occasions
- The significance of flavor and texture variations in desserts
- Techniques to decorate and present an upscale buffet of desserts
* For the price of this class, you will receive a customized class recipe book featuring original recipes by Chef William Werner; 3-night hotel accommodations; transportation to and from hotel lodging facilities; daily lunch provided by PreGel; professionally taken photographs of the entire class experience; a PreGel certificate of completion; and 24 Continuing Education Hours certified by the American Culinary Federation. To maintain an intimate learning environment, class sizes are no larger than 20 students max.

Cancel less than 30 days before the class start date: no refund
Cancel 30-60 days before the class start date: 50% refund
Cancel more than 60 days before the class start date: full refund
