Gelato Innovation & Exploration

This brand-new and exciting class from PreGel America is for those with an adventurous appetite and heart for exploring what’s new and trendy in the world of gelato. Put on your thinking caps and let your imagination run wild. In this inventive class students will learn how to formulate gelato and sorbetto with unique flavor combinations and ingredients as well as learning inventive decorating techniques to really wow your customers. Class subjects will include recipes, ideas and hands-on production of items such as cocktail themed sorbettos, savory/sweet gelato combinations, the use of spices, herbs and a few surprises here and there.

Day 1 Schedule

Preparation of alcohol bases and overnight aging for Day 2 production
